However, when dealing with active, raw Australian Manuka honey—especially rare, ultra-high grades like our MGO 850 and 1200—the concept of freshness is vital. While the honey will not spoil, its sensitive bioactive compounds and living enzymes evolve over time.
1. The Maturation Process: DHA to MGO
Unlike regular honey, Manuka honey undergoes a fascinating natural maturation period. Freshly harvested nectar from the Australian bush contains high levels of DHA (dihydroxyacetone). Over the first 12 to 24 months in temperature-controlled storage, this DHA naturally converts into MGO (methylglyoxal).

2. Protecting Raw Enzymes (The HMF Indicator)
Freshness also depends on gentle handling after harvesting:
- Unpasteurized & Raw: Commercial processing often subjects cheap honey to high heat for rapid bottling, which destroys live enzymes like invertase and diastase. We keep ours raw.
- Low HMF Values: Hydroxymethylfurfural (HMF) is a scientific marker for heat damage and age. Low HMF numbers prove that your honey was bottled fresh from the hive and kept in pristine conditions.
How to Preserve Your Manuka Honey at Home
To keep your premium MGO 850 and 1200 at maximum therapeutic potency from the first spoonful to the last, follow these golden rules:
- Keep It in a Cool Pantry: Store between 15°C and 20°C (59°F–68°F).
- Avoid the Refrigerator: Cold temperatures accelerate crystallization and harden the honey's velvety texture.
- Shield from Direct Sunlight: UV radiation degrades delicate plant polyphenols and antioxidants over time.
- Use a Clean, Dry Spoon: Never double-dip or introduce water and crumbs into the jar.
